Storage and Degradation of Peptides.

Do you think storing peptides at 4 °C really slows down their breakdown, or could a low‑temperature environment actually accelerate certain chemical reactions?

Hello,

yes:

  • hydrolysis is slowed down,
  • bacteria growth is slowed down
  • oxidation is slowed down

Important info: There are peptides that can gel at low temperatures.
